Note in this picture, you can't really tell which is meat and what is crud. This has taken 45 mins (since the soffrito [course puree] hit the pan) to get here. DO NOT SKIP;  USE SALT TO SEASON EVERY STEP and don't forget to taste every step too ('cuz you can over salt too).
