What we have going on here is 3 Carrots, 2 onions, 3 ribs of Celery along with 4 gloves of garlic browning away. I roughed chopped them first, then placed in a food processor and made a course puree. Now during the browning of your "crud," it will stick. DO NOT PANIC !!! All will be well. This step takes 20 mins DO NOT SKIP THIS TAKW YOUR TIME. Use plenty of salt here, this is the foundtion, any skimping here will result in you packing your knifes and going home. Wood/bamboo spoons are best (and old school too).
